So after 20min of tapping, we had a test run. Just to know if we were doing it right. We boiled down like a quart of sap to make like a tablespoon of syrup. I'm pretty sure it's maple syrup... either way it tasted great. We just boiled it, that was pretty much it. I put it in the freezer for a few minutes so it would cool down and act like syrup and not be so liquidy. At that point I realized I had homemade cheese, homemade beef jerky (two flavors), and homemade maple syrup in my fridge. I need to get out more.
