Farmhouse Cheddar pt3

tie the three corner of the cheese cloth around the one corner and let drain for one hour (as seen above, these are the fun pictures, there's alot more that goes into this that looks fairly boring)

pour the drained curds into a bowl an break them up into walnut sized pieces and add 1tbls of cheese salt (non iodized sea salt will do)
